Hello April, there is no butter in the falafel. The sauce is tahini which is made with sesame seeds, parley, lemon juice and salt.
They do not have gluten free options but if you are just gluten sensitive and not celiac or highly sensitive the dough they use is traditionally Italian. Therefore has no vital wheat in it and therefore takes 24 hours to prepare. Without vital-wheat in it, many will not react to it or will at least react less than they do to modern quick rise doughs.
